Ingredients

750 g Karamel Rome tomatoes

8.5 g fine salt

5 g white sugar

130 g Arbequina Extra Virgin Olive Oil
Preparation

Wash the tomato and chop it, removing the stem end (or core).

Blend everything except the oil in the Thermomix. Two minutes at maximum speed.

Gradually add the oil until it emulsifies.

Ingredients

Juice of 1 grapefruit

150 g white sugar

6 g pectin
-
5 g basil (leaves only / stemmed)

750 g pineapple (cleaned)

1 kg orange (peeled)
Preparation

Take the pineapple, wash it, and chop it.
-
Squeeze the grapefruit and orange.
-
Boil the juices with the pineapple. Add the sugar and pectin.

Blend with a Thermomix and strain.

1 kg greenhouse peppers

1 green papaya

50 g mirin

50 g rice vinegar

2 Tahiti vanilla pods

Star anise
Pepper Dressing Ingredients

600 ml soy sauce

200 ml rice vinegar

50 g icing sugar (powdered sugar)

100 g mustard powder

Half a liter of water

250 g Arbequina EVOO (Extra Virgin Olive Oil)

250 g grapeseed oil

Xanthan gum

Salt and pepper
Sashimi Preparation

Roast the peppers over embers (or grill the peppers). Place them in a bag and seal it to let them sweat for 20 minutes.

Peel carefully and remove the seeds. Cut the pepper fillets into equal squares.
Papaya Preparation

Peel and slice the papaya (which must be green) using a mandoline.

Meanwhile, prepare the pickling liquid by mixing the mirin, rice vinegar, vanilla pods, and star anise. Mix everything uniformly.

Next, submerge the papaya slices into the liquid and let them rest for 48 hours.
Dressing Preparation

Mix all the ingredients cold, add half a teaspoon of xanthan gum, and use a blender to unify the dressing and achieve a thicker texture than the liquid.
Presentation

Place a slice of pepper.

Next, place a slice of papaya.

Then, place another slice of pepper.

Just before serving, drizzle with the dressing.
